The end is almost here. The end of high school. Then end of living year round with parents. Most importantly, the end of home cooked sweets and quick visits to the kitchen cupboards. Therefore, those people with incurable sweet tooths, like myself, are most likely wondering how they will survive when they head off to college. There is only one true answer and that is mug cakes. These treats are sure to turn a frown upside down on a stressful day. I have researched the vast web of recipes and have found three simple mug cake recipes that will be quick and easy, providing satisfaction and happiness for any sweets fan.

This recipe is perfect when you want a smaller snack due to the smaller serving that it makes. It also provides the perfect combination of a dessert that has chocolate but includes other flavors.



  • 1 tablespoon utter
  • 1 tablespoon granulated sugar
  • 1 tablespoon of firmly packed dark brown sugar
  • 3 Drops of vanilla extract
  • Small pinch of kosher salt
  • 1 egg yolk (discard the egg white or save for different recipe)
  • Scant ¼ of all-purpose flour (slightly less than ¼ of a cup)
  • 2 heaping tablespoons of semi-sweet chocolate chips plus more for topping


  1. Start by melting your butter in the microwave. Butter should just be melted, not boiling.
  2. Add sugars, vanilla, salt. Stir to combine.
  3. Separate the egg and add the yolk only to your cup. Stir to combine.
  4. Add flour then stir again. Add a scant, slightly less than full, ¼ cup of all-purpose flour.
  5. Add the chocolate chips and give a final stir. Now your mixture will look like cookie dough. Add a few chocolate chips to the top of the cookie dough.
  6. Cook in the microwave for 40-60 seconds, start checking for doneness at 40 seconds. Mine takes 50 seconds. Do not cook past one minute; just like a regular cookie, this will continue cooking as it cools. If the cookie is dry or cake like, try less time.
  7. Serve warm.


***This recipe ended up making the perfect amount and tasted great with a scoop of ice cream. I followed the recipe exactly, except for the slight change of adding in milk chocolate chips instead due to preference. Therefore, if you like milk chocolate better, I recommend this change.

It’s the quickest solve to a stressful or upsetting day because as Mary Poppins says, “Just a spoonful of sugar helps the medicine go down,” or as it would be said in the case of college, “just a spoonful of mug cake makes the stress go down.”
