Everyone loves brownies; here is a healthier version

This is part two of healthier delicious baked food recipes. There is a stereotypical thought that if it is healthy, it’s not good. This is beyond false. Today, I am going to share a healthier chocolate brownie recipe. I mean…who doesn’t love brownies? Chocolate fan or not, they are the perfect dessert. These brownies are paleo, chewy, can be made vegan, have minimal ingredients and look and taste delicious. They are the perfect gooey and fudgy brownies and they are healthy! With all-natural ingredients, there is nothing artificial in this recipe, which is way better for you than your normal store-bought brownie mix. I am not the biggest chocolate fan, but these are so good, you have to try them. This recipe is also by Megan Roche (like my last article) and she has created another great dessert with these. She has many more recipes on her page, and like all her recipes, these are really easy to make and taste great! Here is the recipe:



1/2 cup almond flour

½ tsp salt

½ tsp baking soda 


1 egg + 1 egg yolk, room temperature 

6oz unsweetened chocolate bar

½ cup coconut oil (or butter/vegan butter) 

1 cup coconut sugar 

2 tbs unsalted almond butter 

½ cup coffee (or water, coffee brings out the rich chocolate flavor) 

1 tsp vanilla 


Optional: ½ cup chocolate chips 



Slowly melt your bar of chocolate and coconut oil together (you can do this in the microwave for 20 second intervals with continuous stirring or you can do this over a stove over low heat) then whisk in coconut sugar, almond butter, coffee and vanilla while still warm (leave out the eggs; you will whisk them in later). 

Once the wet ingredients are smooth and well combined, let the mixture sit at room temperature until fully cooled down. 

Next, mix the dry ingredients and and set aside.

Once cooled, now whisk in the egg and egg yolk to the rest of the wet wet ingredients. 

Fold in the dry ingredients, then fold in chocolate chips (if chosen to add) last.

Add the batter into a greased 8×8 pan.


Bake on 350 degrees for 24-26 minutes.

Let the brownies cool completely before cutting and enjoy.
