Baking with Larissa : Ooey Gooey Cookies… with a twist!!

I’ve written many many articles on different kinds of obey gooey cookies, but these ones are a perfect s’more flavored cookie. This flourless, sugar free, vegan dessert is perfect. This recipe is from Nicole’s blog at


What You Will Need:


7 T Coconut Oil (melted)

1/2 Cup Coconut Sugar

1/2 Cup Almond (or nut) Milk

2 tsp  Vanilla Extract

1/4 Cup Maple Syrup

2 Cups Almond Flour

1 Teaspoon Baking Soda

1 Teaspoon Baking Powder

1/2 Teaspoon Salt

Enjoy Life Foods Chocolate Chips Morsels (medium size)

1/2 Cup Cacao

Vegan marshmallows!

What You Will Do:


In a large bowl, combine almond flour, baking soda, baking powder, coconut sugar, and salt.


In a small bowl, combine melted coconut oil, maple syrup, almond milk, and vanilla.


Pour bowl of wet ingredients into the large bowl of dry ingredients and combine.


Add chocolate chips… I go extra chocolatey!


Add cacao.


Line a baking sheet with parchment paper and spray it with coconut oil. Take a spoonful of dough and place on parchment paper.


Top with marshmallows and more chocolate chips!


Bake at 350 degrees F for 9 minutes. Then, broil on high for 2 minutes to crisp the marshmallows. If you are not adding marshmallows, you do not need to broil.  Remove and let cool! ENJOY!!

** As badly as you want to eat them STRAIGHT out of the oven, you have to let them cool so they don’t fall apart (you may try putting them in the refrigerator to speed up the process). They will still be super super gooey!!
